Similar to frankincense and honey, salt and leaven produce opposite reactions when used. Salt preserves something from corruption. On the other hand, leaven or yeast corrupts or deteriorates whatever it is added into. When it comes to the meal offering, the Bible has a lot to say about using salt.
5 Do you not know that the Lord God of Israel gave the kingship over Israel forever to David and his sons by a covenant of salt? (2 Chronicles 13:50)
34 I will not violate my covenant,
or alter the word that went forth from my lips.
35 Once and for all I have sworn by my holiness; I will not lie to David.
36 His line shall continue forever,
and his throne endure before me like the sun.
37 It shall be established forever like the moon, an enduring witness in the skies.” (Psalm 89:34-37)

On the other hand, if you give your offering, in the world’s economy you’re losing money. However, in God’s economy, you are protecting the rest of your income. God would protect your storehouse. Not only that, He would bless it to overflow.
Do you know that salt was required in every sacrifice that is burned on the altar? It’s not because the priests desired to eat the sacrifice and so they would season it with salt so it would taste good. The salt has a purifying effect on what it comes in contact with. Even newborn babies were rubbed with salt (Eze. 16:4). In another situation, Elisha was able to treat a contaminated water supply in Jericho with salt (see the passage below). From this passage, aside from its purifying, the salt also represents a new beginning.
19 Now the people of the city said to Elisha, “The location of this city is good, as my lord sees; but the water is bad, and the land is unfruitful.” 20 He said, “Bring me a new bowl, and put salt in it.” So they brought it to him. 21 Then he went to the spring of water and threw the salt into it, and said, “Thus says the Lord, I have made this water wholesome; from now on neither death nor miscarriage shall come from it.” (2 Kings 2:19-21)
